Exploring my culinary talents

Lately i've been craving sweets almost everyday. Living on a tight budget, i usually don't have enough to treat myself outside. So i decided to treat myself at home. Back in Dunedin i'd bake a cake or brownies or search online for something new, but living on my own i:
a) find myself passing the baking section in the supermarket without so much as a glance,
b) don't want to bake for one. I'm trying to lose weight, not gain it,
c) miss having my younger sister Amira help me (when i allowed her, lol), and
d) afraid of using my oven. Seems like a dodgy deal to me.

So, instead i've been making the same sweet again, and again and again. And i still can't get enough of it. A few weeks back, i had half a can of coconut milk, and not knowing what to make with it so i googled, and decided on trying Coconut Rice Pudding. Needless to say, it was delicious! I've been making it for myself every time i crave sweets.

So here's my recipe for Coconut Rice Pudding (serves 2):
Cooking time: 10-14 minutes

I cup milk
1 cup water
4 teaspoons coconut cream ( or more, depends hot coconut-y you want it)
1 cup uncooked rice (short works well)
Sugar (or honey)

Place all ingredients in a pot, bring to boil. Turn heat to low, cover and simmer for a few minutes. Stir occasionally.

Server hot or cold, add sugar (honey or sweetened milk) before serving as you like. Bon appetite!

It is :) This time last year, i called mum in the Emirates to give me step by step directions on how to make it. Fail! lol
